Hawaiian Meatloaf

I think meatloaf has been frowned upon to many times. The fact is some recipes are just more superior than others and lets face it, bland meatloaf or over cooked meatloaf is terrible. If you are looking at this recipe thinking, “oh no, not another meatloaf recipe” then please keep reading. You will soon discover that this is not just another meatloaf recipe.
Meatloaf Ingredients:
4 eggs
1 cup sour cream
1 cup milk
½ onion
2 tablespoons flax seeds
2 teaspoons salt
½ teaspoon pepper
1 ½ cups oats
2 lbs ground beef
Meatloaf Instructions
Heat your oven to 350. Grease a 9×12 glass pan with olive or coconut oil. In your high-powered blender add all ingredients except the beef in the order listed above. Set dial to 5 and use the pulse switch a couple of times (do not hold down the pulse switch).* The goal here is to mix the ingredients and dice the onion and oats but not puree them. Add this mixture to the beef in a large mixing bowl and mix thoroughly. Pour into the greased pan and bake for approximately one hour. While the meatloaf is baking prepare the sauce.
*If you don’t have a high-powered blender then just mix the ingredients in a mixing bowl. I’d suggest though that you either use a food processor for the oats or use crushed crackers instead.

Sauce Ingredients:
4 tablespoons cornstarch
1 cup brown sugar
2 large cans pineapple tidbits or chunks (drain and reserve juice)
2/3 cup white vinegar
2 tablespoons soy sauce
1 tablespoon worcestershire sauce
Sauce Instructions:

In a saucepan whisk together cornstarch and brown sugar. While whisking add in reserved pineapple juice, vinegar, and soy sauce. Whisk until smooth. Turn burner on medium heat and continue to whisk until the sauce comes to a slight boil, color darkens and thickens, about 10 minutes. After the sauce has thickened remove from heat and add pineapple. Cover and set until meatloaf is ready. You then have the option of either spreading the sauce over the meatloaf in the pan or drizzling it on top of each individual serving. See photos for examples of the sauce while in process of being made.

Here is the sauce at a low boil. Note the color and the thickness.
This is the point you want to remove from heat and the pineapple is added.
Here is the sauce with the pineapple added. Good enough to eat with just a spoon!

This recipe is great for making ahead and freezing for a later date. Should you choose to freeze be sure to freeze the meatloaf and the sauce separately.
